Crayfish Bay Organics is widely considered one of the finest organic cocoa producers in the world. SICC is no longer sourcing from the estate. This 62% bar was made entirely from their beans, fermented and dried on the property, and represents the last of what we have. A flavour profile that cannot be replicated.

Lighter and more floral than our 60% base. Notes of red fruit and mild acidity on entry, a gentle roast character through the mid-palate, and a clean, rounded finish. A bar that shows what single-estate fine flavour cocoa is capable of at the highest level.
